The traces of grease may have been from the crank/bb interface rather than the BB/frame interface. After a while of riding and washing all sorts of stuff will move around in the BB shell of the bike. [Tongue in cheek comment to follow - I can imagine you found a bit of dirt and grit in there too that you didn't put back in when you installed your new BB]

You don't strictly have to redish the old wheel. Single speed kits come with spacers that allow you to get the correct chain line with a freewheel. If the bike is running a 6/7 speed rear, there is every chance it is a freehub which starts to make things tricky for a SS conversion.

I assume that this is a 21 speed bike (i.e. only 7 gears on the back). I suspect it may be to do with cable tension to the rear derailleur.

I lived in Nth Queensland in Australia (tropical climate with monsoonal rains each summer/autumn). As a kid when our shoes got drenched we would put stuff scrunched newspaper in really tight. Overnight the shoes would dry, then you have some dry shoes to wear the next day. I don't recall them ever smelling like mildew, however we would always take the paper out the next morning because we needed them for school. It is still my go to solution when shoes get wet. Better than anything else, and less likely to cause damage to the shoe from heating etc.
