Two things. First, you should edit the spelling mistake and change it to "head torch", not "head touch". Second, I heartily second the idea that having a combination of head torch and handlebar lights is a really good idea. The head torch allows you to see round corners on twisty trails but provides no depth perception as you cannot see the shadows cast by rocks. The handlebar lights provide the depth perception, but are limited for going around corners.

This may end up being the solution we need to go for, but I'm keen to see what other options there are. This would be a fairly expensive modification to the bike.

I'd note that this adjustment is only really useful for moving one pad closer while moving the other further away. You need to adjust the brake cable to move both pads closer or further away.

Yep, this does still work on a freewheel. In fact I haven't ever tried it on a fixie. The trick when learning is that uphill bit that allows you to roll back by releasing the pressure. As you get better, you can do it on the flat by using the small uphill from the road's camber.
