comment Will changing from a touring bike to a racing bike improve my energy level?
These seem like pretty decent speeds and times to me. I did my first century last year at age 48. My average speed and total time were pretty much the same as yours. And although I was a bit sore as I built up distance, I did get used to it. All in all, I think you are doing fine. Just keep training, and maybe eat a bit more often.

comment What is the technical name for this nut-bolt thing with inner hubs?
Are the washers attached to the nut or separate? Is there a lock or something at the outer end of the nut, or is that the shaft end showing through? Can you post a picture of the parts disassembled?

@Roflcopter - You can expect the measurement to be accurate within 10 m horizontally and 16 m vertically with a basic GPS. See geod.nrcan.gc.ca/edu/geod/gps/gps13_e.php. A differential measurement will do better, but you need two receivers (at different locations) or a base station at a known location.

comment How to get my feet out of SPD pedals?
You'll get comfortable getting out after a bit of practice. I found that just after that was the most dangerous time. I thought it had become second nature and that was when I started forgetting and fell over for the first time. Haven't done it for a long time now; probably will tomorrow now that I wrote this.
