I'm not sure you can get larger than 53 on the front... can you? Certainly you can go down to an 11-tooth cog on the back which would make for a very high gear ratio (9.7 gain ratio, or 130.1 inches) - realistically more than any normal person needs.

Everything I've heard from phsyios indicates that cycling is pretty gentle on the body, much like swimming. If you do front crawl, swimming seems like a good complement to cycling. I can also recommend indoor climbing/bouldering, which is mostly an upper-body workout.

It will also depend a bit on your weight. Bigger people find climbing harder. If this might be an issue then the stationary trainer may help a bit.
