Jerky is made with lean beef with any fat trimmed away. If the jerky you tried had too much fat, then it was poorly prepared or made with lesser quality meat. As far as salt goes, we do need it when temps are high and we are sweating. You can use a salt-free marinade if you have health issues with salt.

I agree- ignore the numbers on the shifter. Learn to look between your legs and check the position of the chain on the rear. Pretty soon, you won't even have to look to know what gear you're in.

Also make sure you aren't "cross-gearing", e.g. smallest ring in front and largest gear in back or vice versa. When the chain is at a high angle, it can stick to the gears.
