Building a city/trail bike with a CX frame, what should I consider?

What would be a good build for a 80% city / 20% trail bike?

I recently purchased a Cinelli Mash CXSS frame, iI will be mainly riding in the city but wanted to also take it to the trails every couple of months. My question is what would be a good build for a 80 pcnt city 20 pct trail bike. 

I also was thinking of building this up as fixed gear (with a front Canti break), so would welcome points on that too.

First post so take it easy i am new to building bikes but have owned a few roadies before.
