That could be an option, I imagine it would look better than a DIY drop bolt for caliper brake | |

I've updated the question with two alternatives that I've found that are fixed with a single bolt through the fork like a caliper brake. Leaving the question as unanswered a little longer in case anyone knows where I can get a brake like this, as both I have found so far are discontinued | |

The brake in the photo is actually attached to the fork the same way you would attach caliper brakes... I've added a second photo of just the brake itself, hope that gives a better idea | |
